Wine-making processes have come a long way over the past few hundred years. That which used to pass for an amusing little wine would be an out and out joke now. Because of the excess sediment present in wines, pieces of toasted bread were put into the goblets to act as blotting paper for all the bits and pieces. With the considerable improvement of wine production methods the practice largely died out except when the guest of honour’s health was being drunk – hence the current usage.
